Several years ago, I acquired a bright, beautiful cookbook called Earth to Table. Written by Ancaster Old Mill’s executive chef, Jeff Crump, and then-pastry chef Bettina Schormann, it’s a hardcover tome that extols the virtues of slow food â€" eating locally and seasonally. It weaves together photography, essays, profiles of food producers, and, naturally, lots of recipes.

Here's a favorite from The Times-Dispatch archives: Pour milk into a heavy saucepan over medium heat. Whisk in flour until thoroughly blended. Add mustard. Stirring constantly, bring to a boil for 2 minutes. Remove from heat. Stir in ½ cup cheese until melted. Add hominy, mix well and pour into a 1-quart baking dish. Sprinkle top evenly with breadcrumbs.
